In Italian, the word casereccio means homemade. Casarecce is traditionally made by wrapping the pasta around a thin rod known as a "ferro". This gives it a scroll-like shape as the pasta is rolled onto itself. At Trulli, we extrude our casarecce from bronze like all our shapes. Being more thick, casarecce tends to maintain a fabulous al dente texture and is best served with chunky sauces.
