Traditionally made in Tuscany, our most robust and hardy shape of pasta is certainly pappardelle. These broad, flat ribbons make it the perfect long pasta for a more heavy sauce such as our famous Bolognese. In Italian, pappardelle gets its name from the word pappare, which means "to gobble up".
